Recipe: Vegan Chocolate Chip cookies
Here’s the last vegan baked goods recipe I tried out. Probably my least fav, but I didn’t grow up on choc-chip cookies - might be an American thing. Anyway, I figured I will have American kids one day, so I had better learn how to make these, and why not a healthier version while I’m at it! (This recipe is from The Pastry Affair)
1/2 cup brown sugar, packed
1/4 cup granulated sugar
2/3 cup vegetable oil
1/4 cup almond
2 teaspoons pure vanilla extract
2 cups all purpose flour
1/2 teaspoon baking soda
3/4 teaspoon salt
3 ounces semisweet vegan chocolate, roughly chopped (I used vegan choc morsels/chips too, to make it even more choclately)
Preheat oven to 350 degrees F (180 degrees C).
In a large mixing bowl, whisk together the brown sugar, granulated sugar, oil, and milk for several minutes until the mixture resembles a smooth caramel sauce. Stir in the vanilla. Fold in the flour, baking soda, salt. If the dough is not stiff enough to hold its shape, add more flour by the tablespoon until it holds together. Mix in the chocolate chunks. I formed the cookies in my hand to the size I wanted. Bake for 8-9 minutes, or until lightly browned on the edges. Cool on the baking sheet for several minutes until transferring to a cooling rack to cool completely.
