Recipe: Easy Stir Fry

I’ve been making it a lot lately, and I think I have finally figured out the best recipe:

Udon noodles/Whole wheat spaghetti (I use either one)

Any combination of vegetables you like, I use: Broccoli, carrots, corn, peppers, onions,sprouts, peas, asparagus, mushrooms etc.

1 vegetable stock cube

1 tbsp garlic/ginger paste

Boiling water

Soy sauce

1 tbsp brown sugar

2 tbsp Balsamic vinegar

1 tsp, chilli flakes

juice of half a lime

Boil the pasta separately. Boil water, and pour over the stock cube and leave to dissolve. Begin frying on a medium heat, all the denser vegetables, like broccoli, carrots etc. You can use olive oil, or any other Asian oils suitable for frying. Fry for about 3 minutes, then add all other vegetables, keep stirring/flipping. Add paste, salt. (you can add pepper too if you like, I usually add some black pepper and a pinch of cayenne)

Add soy sauce to dissolved stock cube water, along with brown sugar, balsamic vinegar and chilli flakes. Stir well and pour over vegetables. Add cooked pasta, stir and squeeze half a lime over. Stir fry can also be served over rice instead of the noodles/pasta. For protein, I have added cooked Lentils (vegetarian option) or chicken (Marinated chicken breast pieces in soy sauce and garlic/ginger paste)
