Recipe: Orange and Poppy seed muffin
So my hubby wanted a quick snack for breakfast in the morning. He never eats breakfast because he does not eat eggs and anything else will take too long to make. So I decided to make muffins or scones…the first batch however was a total failure…
Round 2 was more successful..lemon and poppy seed muffins, which he loved. This time I decided to try them with orange instead. Yumminess to the max! So here’s the recipe, everyone should try this at least once:
1 tbs poppy seeds 3/4 cup milk 2 and 1/2 cups self-raising flour 3/4 cup caster sugar 125g butter melted 2 eggs lightly whisked 2 tsp orange rind 1/2 cup orange juice Icing sugar to dust
Preheat oven to 375 degrees farenheit. Combine the poppy seeds and the milk in a bowl and set aside for 10mins. Combine the flour and sugar in a large bowl. Add the seed and milk mixture with the eggs, butter, orange rind and juice and stir until just combined. Spoon into pre-greased muffin pans and bake for 25mins or until a toothpick comes out clean. Dust with icing sugar and serve warm. Enjoy!
