What's for dinner?? Rosemary and Soy Sauce Lamb Chops with Sweet Potato

Let me just say up front, that I probably won't be doing this every night, but I will endeavor to keep you posted on what I'm cooking these days. Complete with recipes and pictures. And I'll try to do it as often as possible. 

So tonight we have Lamb chops on the menu. This is a family favorite, my husband's actually, and usually I make it a certain way, with certain sides (Roasted vegetable Couscous), but tonight I thought I'd change it up a bit, and try something new.  So I added sweet potatoes to the dish with the lamb and served it with rice instead. I also steamed some corn on the cob, and made a green salad. It was delicious! So here's the recipe:

Baked lamb chops with rosemary and sweet potatoes: 

lamb shoulder chops (one for each person) 

2 sprigs rosemary

olive oil 

3 tbsp soy sauce

half an onion

half a red pepper



dried oregano

garlic powder

cayenne pepper

one sweet potato

Rub salt, pepper, dried oregano, cayenne pepper and garlic powder onto meat. Brown meat in a hot pan (with olive oil) on both sides. In a large oven-proof dish, place roughly cut up onions and red pepper and break up one sprig of rosemary. Place browned meat on top of onions. Drizzle soy sauce and olive oil over the meat and break up one sprig of rosemary over the top. Cut the sweet potato into medium sized cubes, place around meat. Cover with foil, and put in the oven at 350 degrees F, bake for 1hour or until meat is tender. Broil on both sides, to add color to the meat and lightly roast the potatoes.
